Fruit Quesadillas

Looking for a quick and easy summer lunch or dinner for your kids? Every once in a while, I ask my boys what they would like for dinner. It’s always amusing what they request. One requested cheese quesadillas, and one requested a banana rolled up in a tortilla with peanut butter. This came to me as a way to combine the two! Plus, my kids aren’t big veggie eaters, even though we are working on it every day, but we are HUGE fruit eaters to make up for it. They will pretty much eat any fruit, and in mass quantities.

This took only a couple minutes to make. Start with 2 tortillas, and spread each with a little cream cheese. Straight from the block, there’s no need to sweeten it.  Then place thin slices of almost any fruit on one of them. I used strawberry, banana, and blueberry because that’s what I had on hand. Apple or kiwi would also be great. Watermelon, probably not so much. Try to keep it in a single layer or it won’t hold together. Kind of press the fruit into the cream cheese.

Sandwich them together and slice up!

If you have a few more minutes, here’s a variation. Melt about a tablespoon of unsalted butter in a pan. Then put that baby in there and fry it up on both sides. It melts the cream cheese a tiny bit, the butter forms a french-toast tasting crust and the fruit inside softens a bit.

I split these between the boys and asked them which they liked the best. They seemed to like both equally!
